All purpose flour3 cups

Canned tomato pulp2 cups
Salt1/2 tsp or to taste
Italian seasoning1 tsp
Turmeric 1/8th tsp
Asefotida1/8th tsp
Oil1 tbsp
Butter1 tsp


Sliced green peppers1/2 cup
Sliced onions1/2 cup
Shredded paneer 1/2 cup
Salt1/2 tsp
Garam masala1 tsp
Red chilli powder1/8th tsp (optional)
Olive Oil1tbsp
Cuisine: Cooking time: 2 hours including resting time mins Serving: 4 people

Pizza is my family’s favorite and paneer pizza is my fusion creation with an added Indian twist.

This recipe includes the base, sauce and topping…..So here goes:

Base :


  1. Warm the water and milk in the microwave until lukewarm.  The water/milk mixture should not be too hot or cold. Yeast does not get activated if the fluid is too hot or too cold. If you have a food thermometer use it to make sure the temperature is between 100 & 110 F
  2. Add the sugar, salt and yeast and mix well
  3. Cover and let it rest for 10 minutes
  4. While the yeast is getting activated mix together the rest of the ingredients  - all purpose flour, baking powder and olive oil
  5. After 10 minutes the yeast mixture should look bubbly and creamy
  6. Add the liquid mixture slowly to the flour mixture and knead into a smooth ball
  7. Cover and rest the dough for 90 minutes  - after 90 minutes the dough doubles in size, so use a container with room to grow.

Sauce :

  1. In a saucepan take the tomato puree, fresh or canned
  2. Add the oil, butter, seasoning and salt
  3. Let the mixture come to a boil, cook for 5 minutes and turn it off.
  4. This mixture can be made in advance and can be used as a pasta sauce too.

Topping :

  1. While the dough is rising you can get the topping ready
  2. Crumble the paneer into small bits.  You can use a food processor or just crumble it with hand.
  3. Add the chopped onions, green peppers (you can add red and yellow peppers too if you like) seasonings.
  4. Let the mixture marinate for 15 minutes so all of the paneer absorbs the flavoring.

Assembling :

  1. Preheat oven to 450 degrees Fahrenheit
  2. Once the dough has rested and doubled in size, roll the dough into a circle using a rolling pin, add some  all purpose flour to the surface and the pin to avoid sticking.
  3. Transfer the rolled out dough to a baking sheet.  You can use circular or rectangular sheets, depending on the shape you like.
  4. Roll the ends of the circular dough just to create that finished end of your pizza crust.
  5. Apply the sauce as per your taste, spreading it to cover the whole pizza base.
  6. Sprinkle the topping and the cheese.
  7. Bake for 20 minutes or until the cheese looks brown and the base turns into a golden color.
If you have a pizza stone and a paddle, roll the dough on the paddle and assemble and transfer it onto the pizza stone and bake.
